Job Description

As Restaurant Manager, you'll lead the daily operation of Pastore, our signature modern Italian restaurant, together with breakfast service and In-Room Dining. You'll play a key role in ensuring every dining experience reflects the warmth, sophistication and personalised service that defines the MGallery brand.

This is a hands-on leadership role where you'll inspire your team, foster a positive culture and continually look for opportunities to elevate both the guest experience and operational excellence across multiple dining experiences.

Key responsibilities:

Lead the day-to-day operations across Pastore, breakfast and In-Room Dining.

Ensure exceptional guest satisfaction by proactively engaging with guests, resolving concerns promptly and placing the guest experience at the centre of decision-making.

Lead, coach and develop Assistant Managers, Supervisors and team members, creating a culture built on collaboration, accountability and excellence.

Work closely with the Executive Chef and wider hotel leadership team to deliver seamless service and memorable guest experiences.

Maintain consistently high presentation, service and operational standards across all outlets.

Support recruitment, rostering, labour management and daily operational planning.

Drive service recovery, resolving guest feedback professionally and confidently.

Identify opportunities to improve service delivery, operational efficiency and the overall guest experience.

Build strong relationships with guests, locals, industry professionals and repeat clientele to drive loyalty, gather feedback and enhance the dining experience.

Demonstrate strong business acumen to achieve and exceed operational and financial objectives.

Assist in developing and monitoring restaurant budgets, targets and costs, ensuring stock, labour and operating expenses are managed effectively while maintaining appropriate staffing levels.

Ensure compliance with food safety requirements, hotel standards and company policies.

Maintain a visible leadership presence throughout key service periods, including breakfast, lunch, dinner and weekends.

Qualifications

Previous leadership experience managing premium restaurant or hotel food and beverage operations.

A genuine passion for hospitality and creating memorable dining experiences.

Proven experience leading, coaching and developing high-performing teams.

Strong operational knowledge across restaurant service, breakfast operations and hotel dining environments.

Excellent organisational skills with the ability to balance multiple priorities.

A collaborative leadership style with outstanding communication and relationship-building skills.

A proactive mindset with a focus on continuous improvement and service excellence.

Flexibility to work across a seven-day roster, including evenings, weekends and public holidays.

A visible, hands-on leadership approach that inspires confidence, accountability and teamwork.
